Preheat convection oven on 350°F with dry heat and low to no fan. Remove brisket from packaging with all contents of spice with the meat. Place spice-rubbed corned beef into a 6″ hotel pan. Pour in 1 1/2- 2 gallons of water to cover beef, wrap with foil and place in oven. Depending on size, cook for 3-4 hours to reach a minimum internal cooking temperature of 160°F. To reach fork tenderness, cook corned beef brisket for a total of 5-6 hours. Carve across the grain and serve.
